Botanically, they are the dried, unopened flower buds of the evergreen tree *Syzygium aromaticum*, native to the Maluku Islands in Indonesia. Their name comes from the French word "clou" (nail), referencing their unique shape. The flavor profile of cloves is powerful, sweet, and bitter, accompanied by a numbing sensation on the tongue caused by a high concentration of eugenol, an essential oil with natural anesthetic properties.
In mixology, cloves are a non-negotiable component of hot spiced drinks. They are the backbone of Classic Mulled Wine (Glühwein), Hot Toddies, and spiced ciders. A classic technique is to make a "pomander" by studding an orange peel with cloves; this prevents the small buds from floating loose in the drink and creating a choking hazard, while allowing their oils to infuse elegantly into the liquid. Because of their potency, they should be used sparingly—usually, 3 to 5 cloves are enough to flavor an entire pot of wine. They pair exceptionally well with cinnamon, nutmeg, and citrus peels.
